Polycom VVX 250: SIP mode?

Hello - we recently moved several Polycom VVX 250 phones to a new build (previously used in another office).   They boot up just fine but when we go to place a call, we have a dial tone, and the screen says 'SIP'. When we try to dial a number, a jumble of number and letters appear on the screen - instead of just a phone number.

 

Not sure if SIP is a mode that it's in?  Went through the admin menu and not sure what setting to change to get it working/dialing like a regular phone.
