Had a question on if it is possible with a dual screen set up when sharing content on a poly device to be able to set up as a dual screen content like you would get with a PC where you can extend the display to the other screen? i.e. in windows setting multiple displays to extend accross two screens.

no, that´s currently not possible. If you connect your notebook via HDMI, it sends "one stream" to the endpoint - either a duplicate of your desktop or your extended desktop (your notebook screen being the main screen).
