I'm undergoing an AV standards update currently and I'm liking the concept of pairing a G7500 with the Shure STEM system for speakers and microphones in our medium+ Zoom rooms.
Does anybody have any experience running as this model or know of any issues with this design? As this is for our larger rooms we'd be using the HUBX rather than connecting a single USB device.

Welcome to the Poly community.
Only devices listed in the release notes are supported and tested. The Shure STEM, to my own personal knowledge, is not one of them.
As we cannot discuss potential unreleased software I suggest you work with a Poly reseller as they can set up an NDA if required. Please mention SEFR-741 and EN-212674

I'm already under NDA with Poly, so that saves a step.
I'll follow up with my contacts to see if there's anything afoot that would see this supported.
Stem can support DANTE, but G7500 does not support this protocol yet (maybe worthwhile asking Poly when it will be supported with G7500).
We tried utilizing USB-connection out of Stem Hub into G7500, unfortunately we've run into an issue with far-end echo. Also as a side note Shur Stem (formerly Stem Audio) did not certify Poly G7500 for use via USB. We had to substitute Poly G7500 with generic Windows PC running ZoomRoom application and connect Stem via USB. So far no issues but we are not able to use Poly Eye Director II in cascading mode as it is only supported with Poly G7500 via a proprietary connection to Poly Eye Director II (master).
