I'm having similar issue with Poly Voyager Focus 2 MS Teams certified head set. Micophone's sound quality is very bad. The speakers sound is great, but when I talk though the microphone the participants are not hearing me very well. I did several test calls in Teams and I'm not happy with the sound quality. It sounds very low I would say. I tried different configuration changes like disabling automatic adjustment of mic sensitivity in Teams, with no luck to improve it. Running latest firmware updates on both headset and bluetooth dongle. Going to the sound settings I can see the same configuration as you mentioned with 1 sound chanel which is greyed out and can't be changed.
What about the others, are you suffering from poor microphone quality with MS Teams?

----------------I also had the bad Bluetooth Hands Free Telephony out of the box, but when I used the Plantronics Hub driver software to update my firmware (I'm writing in February 2023), the available profiles updated to PLT Focus Hands-Free AG Audio, and the sound quality was back to HD digital. Leaving this post reply here in case this comes up for anyone else!
If you're on a work computer where they shut off your ability to install software, I think it's worth it to put in a call to tech support to request/beg that they install the Plantronics Hub driver software. It's night and day.
